Generalities To the genus Amaranthus belong some tens of annual or perennial plants, spread all over the globe; most of the species produce lanceolate or enlarged leaves, light green in color, crossed by showy veins in relief; in spring and summer, at the apex of the thin branches they produce long, erect or pendulous catkins, which contain numerous small white, greenish or red flowers; the flowers are followed by small rounded seeds.
